Hello — I’m making my gluten- and dairy-free Christmas pudding today and wanted to share the recipe again. I’ve been making this for about ten years and it’s always a family favourite.
The recipe is flexible so you can adapt it to your tastes. For a child-friendly version try replacing the brandy with orange juice; another year I used spiced rum for a warmer flavour. You can also vary the dried fruit—use all sultanas, swap cherries for cranberries, or mix in different raisins and peel to suit your preference.
This pudding freezes and steams well, making it a great make-ahead dessert for busy holiday days. Serve it warm with dairy-free cream or custard, or simply dust with a little icing sugar for an elegant finish.
