Ingredients

  • ¾ cup apple sauce
  • 3 large eggsorganic, pasture raised
  • 1 cup coconut palm sugarorganic, raw
  • 1 cup buckwheat flour
  • 1 cup amaranth flour
  • 1 tsp vanilla extract
  • ¼ tsp Himalayan salt
  • 1 cup apples,grated
  • cup plant milkI used homemade hemp
  • 1 tsp baking soda
  • 1 tsp apple cider vinegar
  • 1 tsp cinnamon

Instructions

  • Preheat the oven to 380°F (190°C).
  • In a bowl, beat eggs with coconut palm sugar until frothy. Add applesauce, vanilla extract, salt, plant milk and cinnamon; mix to combine.
  • Fold in the grated apples. Sift the buckwheat and amaranth flours over the wet ingredients and mix until combined.
  • Add the baking soda and apple cider vinegar last and mix gently until incorporated.
  • Prepare the snowflake bundt pan by spraying it well with non-stick spray and dusting lightly with amaranth or another gluten-free flour to prevent sticking.
  • Pour the batter into the prepared pan, reduce oven temperature to 360°F (180°C) and bake for about 40 minutes, until golden and a toothpick comes out clean.
  • Remove from the oven and cool in the pan on a wire rack for 10 minutes, then invert to release the cake gently.
  • Dust with powdered sugar or a stevia-based sweetener if desired. Slice and serve.
