
I’m always on the lookout for meals that take less than 30 minutes from start to finish. As a parent, there never seem to be enough hours in the day, and with back-to-school season approaching, quick dinners are more important than ever.
I was excited when Three Bridges reached out to collaborate. They offer a line of easy-to-prepare pastas and sauces that make weeknight cooking fast while still tasting homemade. Their products use simple, high-quality ingredients without artificial flavors, colors, preservatives, fillers, or hormones—ingredients I feel good serving to my family.

These are some of the products they offer. One convenient detail: if you don’t use the tortellini right away, they freeze well for later use.

For this recipe I used Three Bridges Triple Cheese Tortellini paired with their Basil Pesto Sauce. My daughter preferred the Heirloom Marinara, but the pesto was a hit with the rest of us.
This was a simple meal that everyone enjoyed. The basil pesto tied together the tortellini, bacon, tomatoes, olives, and Parmesan. The crispy bacon added great texture—next time I’ll probably add even more.

This dish works well as a side for picnics, a casual dinner, or alongside sandwiches. Three Bridges tortellini is versatile—you can mix it with different sauces and proteins to create entirely new meals.

While this version reflects our preferences, feel free to customize. Roasted bell peppers, avocado, goat cheese, grilled chicken, sun-dried tomatoes, fresh spinach, or jalapeños would all be tasty additions.


Ingredients
- 1 package Three Bridges Family Size Triple Cheese Tortellini (18 oz)
- 1 6 oz can sliced black olives
- 1 16 oz package bacon, cooked and chopped
- 2 medium Roma tomatoes, chopped
- 3.5 oz Three Bridges Basil Pesto Sauce
- 1/4 cup Parmesan cheese
Directions
- Cook the tortellini according to the package directions.
- Drain and transfer to a large bowl. Toss with olives, cooked bacon, chopped tomatoes, pesto sauce, and Parmesan until evenly combined.
- Serve immediately.
