You’ve probably seen the term “brinner” — breakfast for dinner — all over social media. If you prefer dinner flavors in the morning like I do, try flipping that idea: dinner for breakfast. For me, a breakfast black bean burger hits that sweet spot between sandwich comfort and morning fuel.

My go-to base is MorningStar Farms® Spicy Black Bean Burgers. They’re flavorful, convenient, and a great way to enjoy a veggie burger at breakfast. Compared with traditional ground beef patties they have less fat and still pack protein, which made them my staple when I moved toward a more plant-forward diet.

How to make a Breakfast Black Bean Burger

First, cook your black bean patties according to the package instructions. You can pan-fry, microwave, bake, or grill them — I love grilling because it gives the patties a nice char and is quick when you have a gas grill ready in the morning.

While the patties cook, prepare bacon and eggs. I typically fry a sunny-side-up egg so the yolk runs over the burger, but feel free to use scrambled or poached eggs if you prefer.

For the bread, I like English muffins because they feel like breakfast, but a toasted bagel works great too. Spread mashed avocado on one half, add the cooked black bean patty, top with a slice of white cheddar, a strip of bacon, and the fried egg. Cap it with the other half of the muffin and serve hot.

Pro tip: If you mash avocado ahead of time, squeeze in a little lime juice to slow browning and keep it bright.

  • 4 Spicy Black Bean Burgers
  • 4 slices white cheddar cheese
  • 2 avocados, mashed
  • 4 slices cooked bacon
  • 4 eggs, fried

Instructions

  • Prepare Black Bean Burgers according to package directions.
  • Assemble your breakfast burger. Split an English muffin and spread mashed avocado on one side. Top with a cooked spicy black bean burger, a slice of white cheddar, bacon, and a fried egg. Close with the other muffin half and serve immediately.
