For the Whipped Ricotta Spread

  • 1 cup whole milk ricotta
  • 1 tbsp fresh thyme
  • 1 tsp fresh parsley
  • 1/2 tsp lemon zest (optional)
  • 1 tbsp extra virgin olive oil
  • 2 tsp honey
  • 1 clove garlic (minced)
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

For the Crostini Assembly

  • 1 baguette (sliced into 1/2″ slices)
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt
  • 1 green apple (thinly sliced)
  • 1/4 cup pistachios (finely chopped)
  • 3 tbsp honey
  • 2 cups baby arugula

Instructions

  • In a food processor or blender, puree ricotta with thyme, parsley, lemon zest (if using), olive oil, honey, garlic, salt and pepper until smooth. Chill until ready to use.
  • Preheat oven to 400°F (200°C).
  • Arrange baguette slices on a baking sheet, brush with olive oil and sprinkle with sea salt. Bake 6–8 minutes until lightly golden. Remove and cool.
  • Spread about 1 tablespoon of whipped ricotta on each cooled crostini.
  • Top with a thin layer of green apple. (To prevent browning, dip slices briefly in lemon juice.)
  • Sprinkle with roughly chopped pistachios.
  • Drizzle with honey, top with arugula and finish with a light sprinkle of sea salt if desired.
