Dirty rice (also called rice dressing or Cajun rice) is a traditional Creole dish from Louisiana. White rice acquires a light brown, “dirty” color from cooking with browned meat, sauces, and seasonings. Common flavoring ingredients include Worcestershire sauce, soy sauce, beef broth, and savory seasonings that give the dish its classic taste.

The dish has roots in the resourceful cooking of enslaved people who used less-desirable cuts—gizzards, livers, hearts, and pork scraps—minced and seasoned with rice. Today, many versions use ground beef, pork sausage, or poultry, but the dish remains a Creole classic.

I remember my grandmother making dirty rice when she wanted a simple, no-fuss meal. She’d brown ground meat, add chopped onions and a splash of soy sauce, and fold everything into rice. It was humble and satisfying—exactly the kind of comfort food I still love.

Ingredients

  • Rice: White instant rice works well (10-minute success style). If using long-grain white rice, adjust liquid and cooking time.
  • Meat: Equal parts ground beef and sweet Italian sausage (or use all beef if you prefer no pork). Aim for about 80/20 ground beef for flavor and texture.
  • Vegetables: Yellow onion, green and red bell peppers, celery, jalapeño, and garlic. Fresh ingredients give the best flavor.
  • Condiments: Worcestershire sauce and soy sauce add depth and help darken the rice.
  • Liquid: Low-sodium beef broth plus water.
  • Seasonings: Creole seasoning, seasoning salt, Italian seasoning, ground cumin, paprika, and black pepper.

How to make dirty rice

  1. Chop onions, bell peppers, celery, and jalapeño into small pieces.
  2. Heat a large skillet over medium and add the ground beef and sweet Italian sausage.
  3. Break the meat apart with spatulas and cook about 6 minutes until no longer pink, then drain excess fat.
  4. Add the dry seasonings and stir to combine.
  5. Add the chopped vegetables and minced garlic; cook about 5 minutes, stirring occasionally.
  6. Stir in tomato paste, Worcestershire sauce, and soy sauce.
  7. Reduce heat to medium-low.
  8. Add the rice and the beef broth plus water, stirring well to combine.
  9. Cover, leaving a small crack for steam to escape.
  10. Simmer until the rice is tender, about 25–30 minutes, stirring occasionally to check moisture.

Tips for best results

  • Use fresh ground meat: Fresh beef has better texture and flavor than meat that has been frozen for a long time.
  • Use fresh vegetables: Fresh onions, peppers, and celery retain flavor and texture better than frozen or limp produce.
  • Cook the rice with the meat: Simmering rice with the meat and seasonings allows flavors to meld and gives the characteristic color.
  • Limit lid lifts: Don’t open the lid repeatedly while the rice cooks. Stir near the end to check for doneness and to evaporate excess moisture.

Variations

  • Traditional: Add chopped chicken livers and hearts for a more traditional flavor if you enjoy organ meats.
  • Lean option: Substitute ground turkey or chicken for a lighter version. You can use either alone or a mix.
