How to make Rainbow Chocolate Chip Cookies

The dough is a straightforward chocolate chip cookie base with slightly more flour than usual to build thickness without requiring chilling. Because of the extra flour, be careful not to over-bake: remove the cookies a minute or so before they look fully done. They’ll finish setting on the baking sheet and stay soft and thick.

Divide the dough into four equal portions. You can use more colors if you like, but four creates a clean, attractive stripe pattern. Gel food coloring works best for vibrant, true colors without adding too much liquid; Americolor gel is a good option for strong reds.

Description

Thick, soft, and colorful—these Rainbow Chocolate Chip Cookies are a playful twist on a classic favorite.


Ingredients

  • 1 cup butter, room temperature
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 3 cups flour
  • 2 cups chocolate chips
  • 4 different colors of food coloring (gel recommended)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
  2. In a stand mixer fitted with the paddle attachment, cream the butter and both sugars for about 2 minutes on medium speed until light and fluffy. Add the eggs, vanilla, salt, and baking soda and mix until smooth, scraping the bowl as needed.
  3. With the mixer on low, add the flour and mix until just combined.
  4. Stir in the chocolate chips evenly by hand or on low speed.
  5. Divide the dough into four equal portions. Tint each portion with gel food coloring until you reach the desired shades.
  6. Roll each colored dough into an approximately 15-inch rope. Lay the ropes side-by-side on a large sheet of plastic wrap and wrap tightly, pressing the ropes together into one large log. Unwrap and break the log into 2-tablespoon portions, rolling each into a loose ball. Place on the prepared baking sheet and bake for about 9 minutes, or until the edges are set. The centers may look slightly under-baked—that’s okay.
  7. Let cookies cool on the baking sheet for 3–4 minutes, then transfer to a wire rack to cool completely.

Notes

Because the recipe uses a bit more flour to achieve thickness, avoiding over-baking is important. Remove the cookies when the edges are set but the centers still look slightly soft. They will firm up as they cool.

If you like, press a few extra chocolate chips onto the tops of the dough balls before baking for an attractive finish.
