Ingredients
- 1/2 cup almond butter see notes for substitutions
- 1/2 cup coconut oil melted, then measured
- 1/4 cup honey see note for substitution
- 1 teaspoon vanilla
- 1/2 cup raisins or your preferred mix of nuts, seeds, coconut flakes, and dried fruit
- 1/3 cup pumpkin seeds
- 1/3 cup unsweetened coconut flakes
- 1/3 cup almonds raw, whole
Instructions

Whisk together the almond butter, melted coconut oil, honey, and vanilla in a small bowl until smooth.

In another bowl, combine your chosen nuts, seeds, coconut flakes, and dried fruit. Measure out 1 1/2 cups of this mixture.

Lightly spray or grease a 12-cup muffin tin (silicone tins work well). Divide the 1 1/2 cup nut/seed mixture evenly among the 12 cups.

Pour the liquid almond butter mixture evenly over the nut mixture in each cup. The liquid should come nearly to the top.

Freeze the tin flat until solid, about 20–30 minutes. Pop the bites out of the tin and store them in a sealed container or zip-top bag.

Keep stored in the freezer for best texture and longevity. They should keep for 3+ months when frozen.
Notes
Substitutions and tips:
– Tree-nut free: Use sunflower seed butter and stick to seeds, coconut flakes, and dried fruit.
– Coconut oil: Because of its setting properties, other oils do not work well as a substitute.
– Keto: Swap honey for a low-carb syrup like Lakanto maple-flavored syrup or use liquid stevia to taste. Omit dried fruit and use only nuts, seeds, and coconut flakes. Expect a longer freeze time and keep these stored in the freezer.
– Vegan: Use an equal amount of maple syrup in place of honey; bites will take longer to freeze and should be kept in the freezer.
