This is a meal-like soup — the wild rice gives it body and a nutty note that pairs beautifully with mushrooms and gruyere. It has the feel of a risotto but without the constant stirring, and it’s ideal when you want to stay warm indoors and enjoy something comforting.

If you prefer a vegetarian version, simply omit the chicken and add extra mushrooms. For more vegetables, stir in greens such as spinach, frozen peas or trimmed asparagus during the final few minutes of cooking to boost your five-a-day.

For meat lovers, a sprinkle of fried pancetta or cooked bacon on top is irresistible — indulgent, but delicious.

How to Make Chicken, Wild Rice & Mushroom Soup

Begin by heating oil in a large saucepan and frying the sliced mushrooms over medium heat until they’re nicely browned. Remove them from the pan and set aside.

In the same pan, melt butter and sauté the chopped onion and sliced celery until softened, about 4–5 minutes. Sprinkle in the flour and whisk until it’s fully incorporated with the vegetables and butter to form a roux that will help thicken the soup.

Turn the heat to high and slowly stream in the milk while whisking to combine. Add the rice and white wine, giving everything a good stir, then pour in the hot stock and add dried thyme. Bring to a gentle boil, reduce the heat and simmer for about 20 minutes, stirring occasionally, until the rice is tender.

Once the rice is cooked, stir in salt, pepper, lemon juice, heavy cream, shredded gruyere, leftover shredded chicken and the reserved mushrooms. Heat until the chicken is warmed through, taste and adjust seasoning. If you prefer a thinner soup, add a splash of milk. Serve topped with chopped fresh parsley.
