Ingredients
- 1 teaspoon coconut oil
- 3/4 cup raw quinoa, rinsed and drained
- 1 (15 ounce) can lite coconut milk
- pinch of salt
- 1–2 tablespoons maple syrup, to taste
- 1–2 tablespoons unsweetened shredded coconut
- 1/2–3/4 cup blueberries (fresh or frozen)
Instructions
Melt the coconut oil over medium heat. Add the rinsed quinoa and cook, stirring frequently, until the quinoa is toasted and lightly golden, about 4–6 minutes. Pour in the coconut milk and add a pinch of salt. Bring to a gentle boil, then reduce the heat to low, cover, and simmer until the liquid is absorbed and the quinoa is tender, about 12–20 minutes depending on your stovetop and quinoa. Fluff with a fork and sweeten with maple syrup to taste. Divide into bowls and top with shredded coconut and blueberries. Serve warm.
