Campfire Eclairs

One bite into the warm, flaky pastry reveals a smooth vanilla filling, while a chocolate-hazelnut drizzle takes these over the top. They’re easy to assemble at the campsite and taste like a special dessert made around the fire.

Ingredients:

  1. Stick for roasting (about 1″ thick)
  2. Aluminum foil
  3. Cooking oil or non-stick spray
  4. 8-ounce package Pillsbury crescent rolls
  5. 4.6-ounce box vanilla pudding (cook & serve) or pre-made pudding cups
  6. Nutella or chocolate frosting
  7. Whipped cream
Ingredients

Instructions:

Prepare the pudding ahead of time at home following package directions, or bring ready-made pudding cups. To make filling easier at camp, spoon pudding into a zip-top sandwich bag and snip off a corner before using. You can do the same with Nutella if you want a clean drizzle.

How to make eclairs while camping

Cut a piece of aluminum foil roughly 8″ x 10″ and wrap it around the end of the roasting stick, forming a smooth cylinder. Lightly brush the foil with vegetable oil or spray it with non-stick cooking spray so the dough won’t stick.

Pastry around a stick

Separate the crescent roll dough into the eight precut portions. Starting at the wider edge of each triangle, wrap the dough around the foil-covered stick, slightly overlapping the dough as you go to avoid holes.

Campfire eclair

Hold the dough-covered end of the stick over the embers of a dying fire, or over a charcoal grill or BBQ, rotating constantly until the dough is evenly golden and puffed, about 12–15 minutes depending on heat.

Allow the pastry to cool slightly, unwrap and remove the foil, then gently slide the éclair off the stick. Fill both open ends with vanilla pudding using your prepared bag, drizzle Nutella across the top (or spread chocolate frosting), and finish with whipped cream on one end if desired. Serve immediately for best texture.

Tips for Making Camping Eclairs:

  • Use cool dough straight from a cooler; warm dough is harder to wrap and won’t puff as well.
  • Overlap the dough slightly when wrapping the stick to prevent gaps and leaks while baking.
  • Pre-portion pudding and Nutella into zip-top bags for quick filling and less mess at the campsite.

Ingredient Substitutions:

These éclairs are versatile. Try chocolate pudding or marshmallow fluff for the filling, drizzle caramel instead of Nutella, or top with chopped chocolate chips or chopped nuts. Use whipped topping if you prefer a lighter finish.
