My favorite holiday treat is Ghirardelli peppermint bark. It’s rich, minty, and irresistible. While sharing a piece with my oldest (who adores anything mint), he suggested using it in baking. That idea led me to create these Triple Chocolate Peppermint Brownies.

These brownies are dangerously addictive—I had to resist eating the whole pan. Chocolate and peppermint are classic holiday companions, and these are perfect for cold winter days when you want something cozy and festive. We often stir our hot cocoa with candy canes; now we have a new minty chocolate treat to enjoy.

Ingredients

  • 1 package Ghirardelli Brownie Mix
  • 1/3 cup water
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 tsp peppermint extract
  • 1/2 cup white chocolate chips; melted optional
  • 1/2 Andes Peppermint Crunch baking chips optional

Instructions

  • Preheat the oven to 325°F (163°C). Lightly grease a baking pan or line it with parchment paper.
  • In a mixing bowl combine the water, vegetable oil, and egg. Add the brownie mix and peppermint extract, stirring until fully combined. Spread the batter evenly in the prepared pan.
  • Bake for 45–50 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
  • Once cooled, drizzle with melted white chocolate and sprinkle Andes Peppermint Crunch baking chips over the top.

I used the Ghirardelli Triple Chocolate Brownie Mix from Costco for this recipe—I absolutely love that mix. I tested two versions before settling on this one. In the first attempt I sprinkled chopped Hershey’s Candy Cane Kisses on top; they melted into a sweet coating that overwhelmed the brownies. The second approach worked better: drizzle melted white chocolate over the cooled brownies, then top with peppermint crunch baking chips. The crunch chips don’t melt as easily as kisses and aren’t as hard as crushed candy canes, giving a pleasant texture and balanced peppermint flavor.
