Homemade Trail Mix Granola Bars

Ingredients

  • 2 cups trail mix
  • 2 cups granola
  • 1/2 cup honey
  • 1/2 cup coconut oil or butter

Instructions

  1. In a small saucepan, warm the coconut oil and honey over medium heat. Stir as the coconut oil melts and the mixture begins to foam slightly.
  2. When the mixture foams for about 10 seconds, remove from heat and stir in the trail mix and granola until evenly coated.
  3. Transfer the mixture to a 13 x 9 inch baking pan lined with parchment paper. Press firmly and evenly to form a uniform layer.
  4. Cover the top with another piece of parchment and refrigerate for 2–3 hours until firm, then cut into bars.

These bars sometimes break into irregular pieces like peanut brittle, and that’s perfectly fine. For extra indulgence, dip the cooled bars in chocolate or add chocolate chips to the mix before pressing into the pan.

You can easily adjust ingredients—keep the binding agents (honey and oil/butter) the same, but swap or add nuts, seeds, dried fruit, candies, or chocolate chips to create your preferred flavor and texture.
