I miss pie more than almost anything since I started the keto diet. Popcorn and pretzels are on that list too, but pie keeps creeping into my daydreams. I didn’t eat pie constantly before keto, yet I still find myself craving it.

Surprisingly, not donuts—although those used to be my sugar world. I wanted a savory pie that would satisfy both Mary and Paul, and I drew on a childhood favorite: the impossible pie. My plan was to swap Carbquik for Bisquick and see what happened.
Is Carbquik the Same as Bisquick?
The result was delicious, though it didn’t set up like the “impossible” pie I remembered. It turned out more like a bacon cheeseburger casserole baked in a pie dish—and that’s fine. Carbquik adds fiber and body, so on keto it helps you feel full longer.
If a hearty, savory casserole in a pie plate is the goal, this hit the mark.
Was adding Carbquik a good idea? Yes—I would use it again. It thickened the batter and tempered the eggy flavor you sometimes get in crustless egg pies. It didn’t create a distinct crust the way I’d hoped, but it did contribute fiber, which is a common need on keto. If you’re following a low-carb plan, you might also find you need extra fiber in your meals; Carbquik helps with that.
Look for No-Sugar Bacon
One keto lesson: check bacon labels. Many brands add sugar. We prefer a sugar-free bacon such as Appleton Farms. Reading labels and watching for hidden sugars is essential when you’re cutting carbs.
The finished dish looks as good as it tastes, though don’t expect a traditional crust. Next time I’ll try one of my keto pie crusts and compare. For now, this easy bake is a solid, filling meal.
