Ingredients
- ¾ cup apple sauce
- 3 large eggs – organic, pasture raised
- 1 cup coconut palm sugar – organic, raw
- 1 cup buckwheat flour
- 1 cup amaranth flour
- 1 tsp vanilla extract
- ¼ tsp Himalayan salt
- 1 cup apples, – grated
- ⅓ cup plant milk – I used homemade hemp
- 1 tsp baking soda
- 1 tsp apple cider vinegar
- 1 tsp cinnamon
Instructions

Preheat the oven to 380°F (190°C).

In a bowl, beat eggs with coconut palm sugar until frothy. Add applesauce, vanilla extract, salt, plant milk and cinnamon; mix to combine.

Fold in the grated apples. Sift the buckwheat and amaranth flours over the wet ingredients and mix until combined.

Add the baking soda and apple cider vinegar last and mix gently until incorporated.

Prepare the snowflake bundt pan by spraying it well with non-stick spray and dusting lightly with amaranth or another gluten-free flour to prevent sticking.

Pour the batter into the prepared pan, reduce oven temperature to 360°F (180°C) and bake for about 40 minutes, until golden and a toothpick comes out clean.

Remove from the oven and cool in the pan on a wire rack for 10 minutes, then invert to release the cake gently.
