When the bananas on the counter start to blacken, banana bread is always my go-to. I make it as soon as I see those spots. This Greek Yogurt Banana Bread is a new favorite: tender, moist and not overly sweet.

Greek Yogurt Banana Bread

Ingredients

  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup nonfat plain Greek yogurt
  • ⅓ cup honey
  • ⅓ cup packed light brown sugar
  • ¼ cup (½ stick) butter, melted
  • ¼ cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 small (or 3 large) ripe bananas, mashed

Instructions

  1. Preheat the oven to 350°F. Spray an 8×4-inch loaf pan with nonstick spray.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt and cinnamon. Set aside.
  3. In a large bowl, whisk together the Greek yogurt, honey, brown sugar, melted butter, applesauce, eggs and vanilla. Stir in the mashed bananas.
  4. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Pour the batter into the prepared loaf pan and bake about 55 minutes, or until golden and a toothpick inserted in the center comes out clean.
  6. Cool in the pan for at least 20 minutes, then turn the bread out onto a rack to cool completely before slicing.
