At this time of year I often end up with extra egg whites in the fridge. While I could make an egg white omelet, I usually prefer something sweeter—meringues are my go-to. They’re light, crisp, and satisfy a sweet craving without the heaviness of many cookies.

Meringues are simple to make and naturally fat-free. While I won’t call them health food, they’re certainly a lighter cookie choice. The peppermint flavor adds a festive twist, and dipping the bottoms in chocolate gives each bite a satisfying contrast of textures and flavors.

Ingredients

  • 2 egg whites
  • 1/2 cup powdered sugar
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon peppermint extract
  • Candy melts or chocolate bark for dipping

Instructions

  1. Beat egg whites with a mixer until soft peaks form. Gradually add powdered sugar, then cream of tartar and peppermint extract, mixing until fully incorporated. Continue beating until you have firm peaks—the peak should stand straight when the beater is lifted.
  2. Spoon the meringue into a pastry bag fitted with a large tip, or simply spoon onto a parchment-lined baking sheet, piping or mounding about 2–3 tablespoons per cookie.
  3. Preheat the oven to 225°F (about 110°C). Bake the meringues for 25–30 minutes, then turn the oven off and leave the meringues inside for an additional 2 hours to dry. Remove and let cool completely.
  4. Melt the chocolate or candy melts according to package directions. Dip the bottoms of the cooled meringues into the melted chocolate and transfer to parchment paper to set.
  5. Store finished meringues in an airtight container to keep them crisp.
