Coleslaw

  • 1 bag coleslaw mix (red & green cabbage with carrots)
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup (use date syrup for Whole30)
  • 1/4 cup Whole30/paleo mayo (avocado oil mayo recommended)

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with foil or parchment. Cut sweet potatoes into 1/4″ slices then into strips. Toss with oil and seasonings, spread in a single layer, and bake 20 minutes. Flip and bake another 5–10 minutes until crispy.
